I love spinach.  I like to have it simple – sauteed with garlic and a little spicy. I leave a bit of sauce in mine.

Sauteed Spinach

Ingredients

1 bundle fresh spinach
3 cloves garlic
Salt to taste
Scotch bonnet pepper
2 tablespoons olive oil

Directions

  • Cut stems off of spinach and put spinach into a large bowl or the kitchen sink filled with water.  This allows all of the dirt to settle at the bottom.  I usually wash the spinach leave three or four times, making sure that all the dirt has been washed out.

  • In a pot add the oil and the garlic.  Cook garlic until it is golden brown.
  • Drain the spinach and add the leaves and scotch bonnet to the pot.  Stir.

  • Let leaves wilt, about 5 minutes.  Add salt and garlic powder.
